Easy Colorado Vacation Recipes
Fly - fishing in the month of September in Colorado is a recreation not to pass up. Standing in a steam under a palette of colors, while a fresh,breeze stirs the gold Aspen's leaves as you make your last cast of the day. You think how lucky you are to be here in this natural scenic setting. However you do have to time it right. The fall colors are fleeting, lasting only about a week in most places. A good place to start is Maroon Bells. Quite possibly the most photographed mountains in North America; the Maroon Bells are situated southwest of the aptly named town of Aspen. These peaks are an ideal spot to capture the glory of fall color on film. For more options try the Colorado State Parks. They offer the perfect landscapes to photograph the beauty of the season. Estes Park, where Aspen trees start turning in late August. The peak of the gold rush in the park is usually in late September. If you arrive in mid September at Estes Park you can witness the Elk bugling. Their matting season runs from mid-September to mid-October.
Every year we travel (in the fall) to Colorado it's always a challenge to come up with easy to prepare dinners so the cook can get out of the kitchen and enjoy the beauty of the fall. Our friends joined us and made a contribution of salmon. We fish early in the morning and have what we call a quite time in the afternoon. That is where everybody goes into there corner to read or nap. I wanted to fix the salmon before our quite time and set it aside. So I decided on this easy recipe to baked the salmon and glaze it with honey mustard sauce.
Here is what you will need for:
Honey Mustard Salmon
2 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon finely grated lemon zest
4 (6 ounce ) salmon fillets
Salt and ground black pepper
Cooking spray or butter
In an oiled ( cooking spray or butter ) shallow baking dish combine lemon juice ,Dijon mustard,honey and lemon zest. Stir together. Season both sides of salmon fillets with salt and pepper and place in the baking dish. Flip salmon to coat in glaze. Bake immediately or cover with plastic wrap and refrigerate for up to 3 hours. The cool part about this easy recipe is the choice you have to refrigerate while you bury yourself in a good book.
When ready to cook , preheat oven to 400 degrees F. Bake 10 minutes until fish is fork - tender. Be sure to drizzle a little extra honey just before putting your dish in the oven.
Just before the salmon is ready we sauté a small package of green beans along with a little garlic and onion. We then cut two sweet potato's in half and microwave until tender, about 6 minutes. Depending on the elevation and size of the potato. Everything should be ready to serve in about 20 minutes time unless you want to throw together an easy salad. Since you already have the honey and Dijon mustard try this for an easy dressing.
Honey Dijon Dressing
4 tablespoons Dijon mustard
2 tablespoons honey
8 tablespoons of extra virgin olive oil ( taste as you add to see if you need more or less for your liking )
Salt and Pepper to taste.
Blend all in a small bowl and serve over lettuce of your choice.
Now after your delicious but easy dinner you have time to sit back with a glass of wine and talk about tomorrows fishing or the one that got away today...
